The huertos are Attesi's working gardens — a series of beds, orchards, and growing spaces designed around permaculture principles and tended by hand. This is where the food on your plate originates: heirloom tomatoes, leafy greens, peppers, herbs, root vegetables, stone fruit, citrus, and a rotating cast of seasonal crops grown without synthetic inputs.
The gardens are organized as a living system. Companion planting reduces the need for intervention; cover crops build soil between seasons; greywater feeds the orchards; and compost made onsite returns nutrients to the beds. Nothing leaves the property as waste.
Guests are welcome to walk the huertos any time, and farm tours move through this space slowly — pointing out what is in season, what is going to seed, and how the gardens shift with the rhythm of the year. If you stay long enough, you will start to recognize ingredients on the dinner table that you saw growing that morning.
